CHOPSUEY (2ND QUARTER)

THE CHOPSUEY

THE MAKING OF CHOPSUEY



  • INGREDIENTS
  • 1 large carrot, peeled and sliced on a bias into ¼-inch thick
  • ½ broccoli, cut into florets
  • ½ cauliflower, cut into florets
  • ¼ small cabbage, cut into 1-inch thick strips
  • ½ small red bell pepper, seeded and cut into strips
  • ½ small bell pepper, seeded and cut into strips
  • 1 tablespoon oil
  • 1 small onion, peeled and sliced
  • 1 to 2 cloves garlic, peeled and minced
  • 1 cup chicken thigh fillets, cut into 1-inch cubes
  • 1 tablespoon oyster sauce
  • ½ cup chicken liver, cut into 1-inch cubes
  • 4 to 5 pieces baby corn, halved crosswise
  • 5 to 6 quail eggs, hard boiled and peeled
  • 1-1/2 teaspoons corn starch
  • salt and pepper to taste


INSTRUCTIONS


1. heat oil. Add onion and cook until translucent. Add ginger and garlic, and cook until both are fragrant.

2 . Add cauliflower, chicharo, and young corn with water. Cover and let simmer 5 minutes or until cauliflower is heated through. Toss in red bell peppers. 
3.  Mix sesame oil, soy sauce, and cornstarch. Pour into the wok, stirring, and toss to coat. Add pork,  tossing until cooked through. Season with salt and ground black pepper, to taste. Serve while hot.

MAKING OF DOUGH AND YEMA

THE CONCEPT , BASE AND STRUCTURE OF PALITAW WHICH IS THE DOUGH 😋 ALSO THE FLAVOR AND THE FILLING OF OUR PALITAW IS YEMA😍


The Dough
Ingredients
  • 2 cups glutinous rice flour
  • ½ cup granulated sugar
  • 1 cup water
  • ½ cup sesame seeds roasted
  • 1 cup grated coconut

Instructions   

 1.Combine glutinous rice flour with water and mix until a dough is formed.

2.  Scoop about 2 tablespoons of dough then mold it into a ball-shaped figure

3. Flatten the ball-shaped dough using the palm of your hands

4. Boil water in a cooking pot then put the ball shaped dough and wait until it flows up.

The Yema

Instructions

1. Combine egg yolks and condensed milk. Mix well.

2. Add chopped walnuts. Whisk until well blended.

3. Melt butter in a cooking pot or pan. Pour the egg yolk mistuxe into the pan. 

4. Continue to cook until the consistency becomes very thick to the point that it can easily form a shape when molded.

5. Transfer the mixture to a bowl. Let it cool down.
